Cauliflower Crust Pizza



For the crust:  
1 cup chopped cauliflower
1/2-3/4 cup shredded mozzarella/parmesan mixture
1 beaten eggs
1 tsp chopped garlic
1/2 tsp Italian herbs (you can use oregano/basil)
Directions 


Step 1: Make the Cauliflower Crust
Place oil water and put cauliflower in the pot.  Cook approx 10 minutes until cauliflower is soft.  Drain in a strainer to remove excess water.  place in a bowl.  mash with hands until all large chunks are broken up.  add cheese, egg, garlic, pepper, seasonings and mix together.

Step 2: Bake Crust
grease a baking sheet and flatten mixture onto it.  bake at 450 for 15-20 minutes or until browned.  remove from oven.  if difficult to remove, may want to flip it onto another sheet and bake again until the other side gets crisp as well.  top with mixed veggies, cheese, and any other toppings you want! broil for 15 minutes until cheese is melted.  called a pizza, but i think it was more of a "tart" kind of a thing!

Step 3: Add toppings
In a pan over medium heat, sautee a mixture of mushrooms, spring onions, garlic, kale, and broccoli. Drizzle  some olive oil on the "crust", top with the cooked mixture, and sprinkle mozzarella/parm and fresh herbs on top.

Step 4: Cook the Pizza


Set oven to Broil and cook until top has browned (about 5 minutes)
